Renew your faith in cod with this sumptuous recipe

Michelin-starred chef Glynn Purnell shares the recipe to one of his signature dishes – so you can experience it at home the popular signature dish served at Purnell’s Bistro… Devon cod with chorizo, goats cheese, butterbeans and spinach!

Instructions

Pre-heat oven to 180°c. Cook chorizo in simmering water for 5-7 minutes, remove from heat and allow to cool, put the stock to one side and remove the chorizo.
Place cod on a tray you have pre-lined with buttered parchment, season and cook them for 7-10minutes in the oven.
Peel skin from chorizo and cube, warm in pan with 200ml of the chorizo stock.
Add butterbeans and cook for a further 3 minutes.
Crumble the goats cheese into the chorizo and butterbeans, allowing it to melt and then cream the sauce.
Add spinach and cook for two minutes until wilted.
Finish the mixture with a squeeze of lemon juice and place in a bowl.
Take the cod from the oven and serve.

Red nose day at Purnell’s

Some of the nation’s favourite celebrity chefs and cooks including Hugh Fearnley-Whittingstall, Raymond Blanc, Antonio Carluccio, Angela Hartnett, Michael Caines, Valentine Warner, Allegra McEvedy, Glynn Purnell, Aktar Islam and Monica Galetti, have teamed up with British pottery designer Emma Bridgewater to support this year’s Red Nose Day efforts.

The cooks have stepped out of the kitchen and in front of the camera to show off Emma Bridgewater’s quirky new range of Comic Relief cookware, which includes tea towels, bags for life, aprons, slogan mugs and printed oven gloves.

Chef Glynn Purnell also added: “The quality of design and merchandise available will ensure that vital funds will be raised to help those less fortunate both here in the UK and Africa. I am extremely proud to be involved and hope Red Nose Day 2013 receives the support it deserves.”
